DAIRY FREE ‘N’ DELICIOUS CHOCOLATE MOUSSE TART

Welcome to the first in a series of ‘Sunday Yums‘ – a feature I’m hoping i’ll stick to will bring you happiness at the weekends! Since I’m not wedding planning any more, I have room in my brain again for creating healthy, gluten-free, wheat-free and occasionally dairy-free treats. This is a relatively simple recipe that you can whip up on a Sunday and enjoy throughout the week. It was inspired by a reduced packet of edible flowers from Sainsbury’s and my inability to leave them to die before they’d decorated a tart…

You might remember this raw chocolate mousse┬ámade from avocados that I created for the British Military Fitness recipe book, you might not. Either way you’re probably thinking all sorts of stuff about avocados and how they don’t belong in a pudding. There’s no easy way to tell you that you’re wrong about that, you’ll just have to make this tart and see for yourself!

This mouth-watering recipe is made up of lots of healthy fats like almonds and avocados and incorporates antioxidant-rich cacao powder as well as honey and dates for that irresistible sweetness. It’s hard to believe it isn’t super naughty when it’s melting in your mouth!

 

To make the base you’ll need:

12 medjool dates
350g almonds
2 tablespoons of coconut oil
2 tablespoons of oats
1 tsp vanilla

For the chocolate filling

4 ripe avocados
200g coconut oil
210g raw cacao powder
340g honey

*If you want, you can substitute two of the avocados for 2 extra ripe bananas for a slightly sweeter filling.

 

To make the base…

…soak your dates in boiling water until soft. Then, scoop them out of the water and blend with the almonds, coconut oil, oats and vanilla. It should form a sticky dough. Press the dough into a non-stick cake tin (preferably one with a removable shell) and put into the freezer to set.

To make the chocolate filling…

…combine all the ingredients together and blend until the mixture is smooth and gloopy. You can then spoon it over the base and put the whole thing in the freezer for a few hours to set. Slice cold and enjoy!

Decorate the top with whatever you fancy! I used chocolate shavings and edible flowers but next time I’m going for all the berries and maybe white chocolate shavings? Mmmmm.
