RAW CHOCOLATE & SALTED CARAMEL FUDGE PIZZA

February 16, 2016

I am obsessed with this raw chocolate fudge recipe, especially when it involves salted caramel made from delicious sticky sweet Medjool dates and nut butter and it’s shaped like a pizza. This raw chocolate fudge is rich in antioxidants from raw cacao and full of vitamin E thanks to the all-natural nut butters. It’s refined-sugar free too so there’ll be no chocolate coma after enjoying it. Scroll to the bottom for the easy recipe! This recipe is dairy-free and gluten-free for those who need it.

You’ll need

100g coconut oil

100g cashew butter (any nut butter will do as long as it’s natural!)

100g honey

50g cacao powder

1 tsp vanilla essense

pinch salt

For the caramel

6 medjool dates

splash of boiling water

heaped teaspoon of any nut butter

salt to taste

1 tbsp coconut oil

Blend the fudge ingredients together until smooth and dollop on a baking tray in a pizza shape! You can also put these into individual chocolate moulds if you prefer, or make a solid rectangular block in a baking tray. Just made sure it’s lined with baking paper or foil so it doesn’t stick! Soak the dates in a splash of boiling water, and then blitz them together with the other caramel ingredients. Drizzle the salted caramel on top of the chocolate fudge dollop and swirl in however you fancy. Freeze for an hour and slice. Enjoy!
