sweet potato crisps

Hummus is my biggest weakness. I’m serious. If hummus was a person it would be a smoking hot Scottish singer/songwriter DJ’ing starkers in the kitchen and I would be a love-struck T Swift writing hopeless codependent love songs about our relationship. Unfortunately, the shop-bought stuff is full of rubbish, so where possible I always try and make my own. Whip that up with a perfect batch of sweet potato crisps (or crips as we call them in this house) and I’m set for the evening.

For this post, I have teamed up with OXO Good Grips to bring you the BEST healthy home-made crisps and dip ever. With a little help from their Mandoline Slicer (pictured below) healthy homemade crisps are literally seconds away. It sure beats risking life and limb (literally) with a kitchen knife and a steady hand. This way, all my crisps are perfectly cut and the same size for some seriously satisfying snackage.

Here’s the best part, to celebrate reaching 2k followers on Instagram I am giving away one of these babies so that you too can make this awesome, wholesome snack. Ditch the Doritos and shop-bought dip for this recipe as a really easy, beneficial swap that will nourish you from the inside out. If you want to be in with a chance of winning it, just head over to my Instagram page. @georgiaadolpho. Recipe below!

1 can drained chickpeas

2 tbsp lemon juice

1 tbsp olive oil

1 heaped tsp of tahini

salt & pepper to taste

squeeze of lime juice

pinch of cayenne pepper (optional)

Sweet Potato Chips

1 large sweet potato

cayenne pepper

For the chips, use OXO’s Mandoline Slicer (here) to get the perfect slices. Place on a large baking tray lined with parchment and sprinkle with salt and cayenne pepper. Bake for twenty minutes, turning them over half way through cooking. Take them out when the outer edges begin to darken. Keep an eye on them though, as depending on the size of your sweet potato they may need less time.

For the hummus, simply blend everything together. Drizzle with a bit of olive oil and a pinch of cayenne pepper to finish! (Optional).

Don’t forget to head over to Instagram for a chance to win a Mandoline Slicer of your own.
