GLUTEN FREE BLUEBERRY PANCAKES

It’s some kind of unwritten rule that weekends are actually not weekends at all but pancake holidays. If you’ve ever been on Instagram on a Sunday you too will share this knowledge. Any why not when they are as healthy and delicious as this? The stacks are high, the ingredients clean and the photographs mouth-watering. So I’m joining in with what I firmly believe is the only pancake recipe you’ll ever need. Unless you count the one I’ll inevitably post on Instagram on Sunday, and then you have permission to alternate harmoniously between the two.

You’ll need


1 egg

1 banana

3 tbsp buckwheat flour

3 tbsp almond milk

pinch salt

Handful of fresh organic blueberries

1 tsp coconut oil for frying

Mix ingredients (excluding the blueberries) well until blended into a smooth paste. Dollop some coconut oil into a hot pan, and use a ladle to measure out each pancake. Add the blueberries to the pancake once it’s started to cook, then flip and cook the other side. 

Top with whatever you fancy!
